Raisin Bran Muffins

As prepared by Grand Avenue Bed and Breakfast, Carthage, Missouri

  • 7 cups raisin bran

  • 4 eggs

  • 2½ cups sugar

  • 1 cup vegetable oil

  • 5 cups flour

  • 1 quart buttermilk

  • 5 teaspoons Baking Soda

  • 1 cup raisins

  • 2 teaspoons Salt

  • 2 cups nuts

Assembly

Combine dry ingredients on left in one bowl. Mix eggs, vegetable oil, and buttermilk in a second bowl. Fold raisins and nuts into wet ingredients. Stir wet ingredients into dry.

Baking

Bake in 400 degree oven for 15-20 minutes
