Surprise Flapjacks

As prepared by Grand Avenue Bed and Breakfast, Carthage, Missouri. Adapted from the Silver Palate Good Times Cookbook.

  • 1½ cups whole-wheat flour

  • 1 teaspoon Salt

  • 1 cup bread flour

  • ¾ cup butter (1½ sticks), cut into small pieces

  • 1 cup rolled oats

  • 4 eggs

  • ½ cup yellow cornmeal

  • 1 quart buttermilk (4 cups)

  • 1 tablespoon baking powder

  • ½ cup honey

  • 2 teaspoons Baking Soda

  • 1 cup pecans

Combine dry ingredients (except nuts) in one bowl. Add butter and cut in with a pastry cutter. Mix eggs, buttermilk and honey in the a mixer bowl. Add dry ingredients, then fold in nuts. Cook on hot griddle lightly sprayed with cooking oil.
